Coffee Chia Seed Pudding (makes 3 servings)
- ½ cup espresso or cold brew coffee
- ½ cup unsweetened vanilla almond milk
- ¼ cup chia seeds
- 1 Tbsp. of maple syrup or agave nectar
Mix everything together and let it sit for 3-4 minutes. Mix together one more time and then stick the bowl in the fridge for at least an hour so it can setup.
Insider tip: I normally make a double serving and once it has setup (it will have the consistency of pudding), I divide it among 6 small bowls with lids for the week. I’ve been known to top it with sprinkles, coconut flakes, almond flakes or crushed up dark chocolate but most of the time, I just eat it plain.
